My favourite biscuit recipe on the planet so far….

Peanut butter Cookies.

only the best biscuits I have ever made in the world. ever.

Hugely fattening.

What more could a body ask for

well green leafy vegetables and exercise but hey do the cookies they are more fun.

 

130g (4 1/2oz) butter softened

200 g sugar (7oz) light brown sugar

1 egg

2 drops vanilla extract

200g (7oz) plain flour

1/2 teaspoon baking powder

1/2 teaspoon bicarb

300g (10 1/2 oz) peanut butter

Handful of toasted peacnutes – optional ( I didn’t bother with these which I think makes mine the diet version!!)

 

Preheat Oven 170 C (325F) Gas Mark 3

Cream together butter & sugar til pale and fluffy. Add egg and vanilla, mix well then sit in the flour, baking powder and bicarb.

Then gently sit in the peanut butter then squidge dough into a ball – or as they say in aberdeen a ba’.

Divide dough into 12 equal pieces – I did 12 and still have a blob left over which is in the fridge to make a few extra ad hoc – as when they come out they are HUGE like the ones you buy in the supermarket from the bakery section big, bendy chocolate chip things you know the sort of thing?  So roll each bits into a ball using your hands and then fire  them onto a large flat baking tray – no greasing required as they are essentially butter (sorry arteries)Space them out as much as you can as much like my bottom – they do spread.

Flatten each one slightly with a fork and this is when you sprinkle over the extra peanuts and  bake in the oven for 12 – 15 minutes. Mine took 12 – in the Aga Baking Oven but you know they are ready when they start to go golden brown. They will be soft when you take them out, but will get hard as they cool down.

Remove them from the oven and leave to cool on the baking tray and now the hardest bit of all – try not to eat them all in one go.
